Baking for One: Bannana Bread rev. 1

  • Wait:
    • until you have a small banana that has been sitting in the fruit bowl so long that you're afraid to peel it
  • Cream:
    • 1 T. butter
    • 2 T. sugar
    • pinch dry or fresh lemon rind
  • Mix in :
    • 1/2 of a beaten egg
    • 1 small over-ripe banana, mashed (about 1/4-1/3 cup)
  • Stir in:
    • 1/2 c. flour
    • 1/2 t. baking powder
    • pinch salt
  • Optionally, add:
    • 2 T. chopped nuts (esp. walnuts)
    • or
    • 1 T chopped dried fruit (especially something tangy like apricots)

Pour and scrape into a mini loaf pan and bake at 350 F for 30 minutes.

 

Results

Yes. Yes! YES! Another major hit. Eat in thin slices while still warm accompanied by a pot of tea and a good book.

Calories per batch: 685

(Calories from fat: ca. 200, but half of that is the nuts, so if you skip the nuts, take about 100 cal off both figures)
