- Wait:
- until you have a small banana that has been sitting in the fruit bowl so
long that you're afraid to peel it
- Cream:
- 1 T. butter
- 2 T. sugar
- pinch dry or fresh lemon rind
- Mix in :
- 1/2 of a beaten egg
- 1 small over-ripe banana, mashed (about 1/4-1/3 cup)
- Stir in:
- 1/2 c. flour
- 1/2 t. baking powder
- pinch salt
- Optionally, add:
- 2 T. chopped nuts (esp. walnuts)
- or
- 1 T chopped dried fruit (especially something tangy like apricots)
Pour and scrape into a mini loaf pan and bake at 350 F for 30 minutes.
